Blueberry Crisp

simple blueberry crisp

I don't make desserts as often as I do savoury dishes. Most of the time, if I'm making a dessert, it's because I need to use up some kind of fruit that I've purchased in an unreasonable quantity. You know how it goes - you're at the grocery store and blueberries are on sale, buy 4 get 1 free. That's a good deal, right? It's a great deal until you get home and realize you're going to be eating blueberries for the next 12 days straight.

This easy blueberry crisp  is a great way to use up berries but also works with apples or stone fruits ie. peaches and nectarines. You can make the crumble topping in large quantities and keep it in the freezer so you always have some handy. Mix up some fruit, sprinkle over your pre-made crumble topping and dessert is only 30 minutes away.

Ingredients

Crumble Topping

1/2 cup all purpose flour 

1/2 teaspoon baking powder

1/3 cup brown sugar

1/2 stick cold butter - cubed

Fruit Filling

4-5 cups fresh blueberries

1/3 cup sugar 

1 tablespoon cornstarch 

2 tbsp orange zest

2 tsp lemon juice

2 tsp freshly squeezed orange juice

pinch of salt

Method

1. Preheat oven to 400°

2. to make crumble topping, stir together flour, baking powder, sugar and salt. add cold butter and mix by hand until mixture resembles coarse crumbs. set aside.

3. combine fruit filling ingredients in a large bowl.

4. pour fruit filling into a lightly buttered baking dish of your choice. sprinkle over crumble topping, 

5. bake until bubbling and golden brown, 25-30 minutes.
